Tiger Tail: The Black and Orange Ice Cream for Halloween

Tiger tail ice cream was a favorite in Canada from the 1950s through the '70s, but now you'll only find it in southern Ontario. It was not developed specifically for Halloween, but it's orange and black, so it works. The flavor comes from a combination of orange creamsicle with a swirl of black licorice. If those flavors appeal to you, and you're not near southern Ontario, you might be able to make your own!

Gastro Obscura is nowhere near Ontario, but they did the research and found that people rarely made this flavor at home, and information on it was scarce. Although Morgan Carr is often credited with developing the flavor, the real origins of tiger tail are hard to determine. But they went into the kitchen to experiment anyway. They started with a simple orange ice cream recipe, but had to experiment to make licorice syrup. Of the two methods they tried, the melting of licorice candy gave a better result. The result is a recipe so that you can make tiger tail ice cream yourself. Whether you'd had it before and want to taste the nostalgia, or you're looking for a new experience, you're in for a treat. If you want to make it for Halloween, be sure you have some black and orange food coloring available to boost the special effects.
