Tiramisu Karpatka

Marta of @martaxeats is a pastry and dessert chef of extraordinary skill. She specializes in traditional treats of Poland, including karpatka, which is sometimes called Polish Carpathian Mountain cream cake after that range that dominates southern Poland. The undulating surface of the dessert resembles the mountains they are named after.

Marta tells us that this dessert is a delicate pâte à choux filled with fluffy mousseline cream. Her latest development of the dish is this luxurious tiramisu variety. She has also made a version filled with plum jam.
